Merry Xmas Eve!
The final installment of my xmas treat series is the recipe for these cupcakes, my Grandma Betty's Mayo Cupcakes with Coffee Frosting. They've been a part of my family's history for decades, and through them my grandmother's culinary fame lives on...
Betty's Mayonnaise Cupcakes
Sift together:
2 cups all-purpose flour
1 cup sugar
1/2 cup cocoa powder
1/4 tsp salt
2 tsp baking soda
Add 1 cup cold water, mix well
Add 1 cup mayonnaise, mix thoroughly
Bake at 350 for 20mins
Coffee Frosting:
1/2 cup butter, creamed thoroughly
Add 1 heaping tsp instant coffee, mix thoroughly
Add powdered sugar and mix
Add a little milk
Keep adding powdered sugar until you have enough frosting to cover the cupcakes
Add 1 tsp vanilla before frosting cupcakes
